200ml fresh lemon juice
500g granulated sugar

To make the Drink (makes 850ml, serving 10)

To prepare the Citrus Syrup: Place all the components into a pot, heat until it reaches a light boil, stirring so the sugar melts. After that, take off the heat and leave to cool entirely. Transfer into an sterilised bottle, cap it keeping it chilled, it can be stored for around one month.

Preparing the Premix: Pour all the liquids into one big jug, allow it to infuse for one hour, then strain , ideally through cheesecloth, so it's completely strained.

When ready to serve: Measure 85ml of the premix to a cocktail shaker filled with ice, gently stirring carefully for about 60 seconds until cold. Strain into an chilled martini glass or a similar vessel, garnish with a few cranberries and finish by giving it a quick spritz of the essential oil over the top.
